Food Handler Training (Public Act 098-0566) is going into effect July 1, 2014 (for restaurants) and July 1, 2016 (for non-restaurants). This requires all food handlers working in restaurants and non-restaurants who do not have a Food Service Sanitation Manager Certification (FSSMC) to get training on basic safe food handling principles within 30 days after employment.

What’s the difference between Restaurant and Non-Restaurant?

Restaurant Non-Restaurant
Any business engaged in sale of ready-to-eat food for immediate consumption e.g. McDonalds, Wildfire, Jimmy Johns, convenience stores without gas stations and mobile food vendors e.g. nursing homes, licensed day care homes and facilities, hospitals, schools, long-term care facilities, retail food stores and convenience stores with gas stations
Must be in compliance by July 1, 2014 Must be in compliance by July 1, 2016
Enforcement will be limited to notification and education July 1 to December 31, 2014 Enforcement will be limited to notification and education July 1 to December 31, 2016
Training is good for three years Not required to take another training unless they change employers
Training is valid throughout the entire State of Illinois unless the training was obtained internally at a facility through a Department approved multi-state training program Training is not transferable between employers
A “train the trainer” approach cannot be used because the food handler needs to receive the training themselves and be accessed by the approved training program provider A “train the trainer” approach can be used (*note “train the trainer” is where one person attends a training and they go back and teach others within their facility)

Where can I find Food Handler Training?

Food handler courses can be found at the American National Standards Institute (ANSI) (specifies California, but can also be used in Illinois). The course and assessment can be completed online, 24 hours/day and does not need to be monitored by an instructor. Upon passing the assessment, the certificate is immediately available to print. Any business with an internal training program approved in another state prior to August 27, 2013 may also be used.
